Our popular cheese of the month is the Shadows of Blue is a double cream blue cheese Made on the Tarago River Cheese Company free range farm.
How is it produced?
The cheese is wrapped in natural bees wax and then aged for approximately 2 to 3 months depending on the conditions.
The wax denies the blue mould of oxygen until the wheels are spiked after around 8 weeks of maturing. This leaves the cheese with pocks of sweeter blue mould laced throughout the dreamy double cream.
What does it taste like?
[Insert Homer Simpson Drooling noise] Mmm double cream blue cheese… The strength of the flavour profile is mild and is a perfect choice for those who don’t eat lots of blue cheese. Its buttery consistency makes it perfect for cheese platters and spreading on crusty bread or crackers.
Where is it produced?
The Tarago River Cheese Company farm is located in the Gippsland region in Victoria, Australia. The area is known for producing come of Australia’s finest dairy products.
